Fungal alpha-amylase (derived from the fungus Aspergillus oryzae)

Inhalation of fungal alpha-amylase in the workplace may lead to allergic respiratory complaints. This is mainly of importance for workers in bakeries and flour mills where the enzyme is added as ingredient in flour products. This is written in an advisory report of the Health Council, which today is presented to the Minister of Social Affairs and Employment.
